Goggle strangeness

We have been optimizing our site for months now - last week we made some bigger tweaks and when the google crawlers went over our site we had a huge drop in SERP - as we were scratching our head trying to decide a course of action, the next time the crawlers went over our site everything went back to normal... well we actually increased our SERP.

Any ideas how this happened? or why?
